This recipe is based on pouring boiling water three times. However, it is worth paying attention to the fact that dense vegetables such as cucumbers or zucchini are usually heated three times. But it is enough to warm up the tomatoes only twice. Otherwise, there is a chance that they will lose their shape due to cracked skin. Although it may burst at the first stage of filling. One can only guess what the results will be by the third approach. Therefore, it is important to choose also dense tomatoes.

You can also add your other favorite vegetables to the jar.

The result is so tasty that literally everything from the jar is eaten and drunk - garlic, carrots, marinade, vegetables. Therefore, it makes sense to prepare more assorted vegetables.
Preparation

To use time wisely, let's start with the marinade. We calculate the amount of water to be approximately half the volume of the jar. So, for a three-liter jar we will need about 1.5 liters of liquid. If you fill the jar tightly, it will be about 1.2 liters. In the marinade we put bay leaf, mustard seeds, coriander seeds, peppercorns, cloves, allspice. Now there is a ready-made seasoning for tomatoes on sale, you can use that too. In addition to the above, it also contains dried garlic. But if you are cooking, then in addition to dry garlic, it is better to take fresh garlic: it is very tasty when pickled. Put the marinade on the fire, add sugar and salt to it, and just before it boils, add vinegar.

The marinade is on fire, and for now we’ll start filling the jars. Jars must be clean and sterilized. The ratio of all vegetables in the jar can be taken arbitrarily. Place carrots and onions on the bottom, and add a horseradish leaf for piquancy.

Then cucumbers.

Place tomatoes and peppers. Place garlic cloves between the vegetables.

During this time, the marinade will be ready: we just need to boil it for two minutes and pour it hot into jars.

Next, cover the jars with boiled lids and simply sterilize them in a water bath, just as we do when preparing pickled tomatoes or cucumbers. Roll up and turn over.

Ingredients (for a liter jar):

  • Tomatoes – 4-5 pcs.
  • Cucumbers – 4-5 pcs.
  • White cabbage.
  • Onions (small heads) – 2-3 pcs.
  • Carrots – 1-2 pcs.
  • Garlic – 5-6 cloves.
  • Hot pepper – 3-5 peas each
  • Tarragon – 1 bunch.
  • Dill – 1 bunch.
  • Sugar – 1 tbsp. l. with a slide.
  • Salt – 1 tbsp. l. no slide.
  • Vinegar 9% – 30 ml.

Algorithm:

  2. Blanch cucumbers, tomatoes, cabbage, carrots in boiling water or steam for a while in a sieve.
  3. Sterilize containers. Fill with vegetables, trying to do it beautifully. Greens can be placed on the bottom, seasonings and spices can be sprinkled on the vegetables during the laying process.

How to prepare assorted tomatoes, cucumbers and zucchini for the winter

Sometimes household members cannot stand rolled cabbage, but look at zucchini with pleasure. Well, this vegetable naturally “joins” the vegetable company of cucumbers and tomatoes.

Ingredients (per liter jar):

  • Young zucchini.
  • Cucumbers.
  • Tomatoes.
  • Onions – 1 pc.
  • Small carrots – 1 pc.
  • Garlic – 1 head.
  • Hot pepper – 2-3 peas.
  • Greenery.
  • Salt – 1 tbsp. l. without top.
  • Sugar – 1 tbsp. l. with top.
  • 9% vinegar – 30 ml.

Algorithm:

  1. Prepare vegetables. Soak the cucumbers. Rinse off sand and dirt using a brush. Trim the tails. Wash the tomatoes.
  2. Peel the zucchini and remove the seeds from the old ones. Rinse again and cut into large pieces.
  3. Send the carrots to a Korean grater. Cut the onion into large pieces. You can leave the garlic cloves.
  4. Sterilize containers. Place seasonings and herbs on the bottom of still hot jars. Next, place the vegetables one by one.
  5. Pour boiling water over it. After a quarter of an hour, pour it into the pan. Add sugar and salt. Boil.
  6. Pour the aromatic, spicy marinade over the vegetables, completing the cooking stage by pouring in the vinegar.
  7. Cork.

You don’t have to pour boiling water over it the first time, but cook the marinade right away. But in this case, additional sterilization in boiling water for 20 minutes is required (for liter jars). The process is unloved by many housewives, but necessary - additional sterilization will not hurt.

Preparing assorted tomatoes and cucumbers without sterilization

For many housewives, the least favorite stage in the pickling process is sterilization in boiling water. Just look, a jar lovingly filled with vegetables and spices will crack due to temperature changes, and your work will go to waste. Fortunately, there are many options where sterilization is not required. The following original recipe is proposed, in which vodka plays the role of an additional preservative.

Ingredients (for a three-liter container):

  • Tomatoes - about 1 kg.
  • Cucumbers – 0.7 kg. (a little more).
  • Garlic – 5 cloves.
  • Hot pepper – 4 pcs.
  • Allspice – 4 pcs.
  • Laurel – 2 pcs.
  • Cherry leaf – 2 pcs.
  • Horseradish leaf – 2 pcs.
  • Dill - umbrella.
  • Sugar – 2 tbsp. l.
  • Salt – 2 tbsp. l.
  • Vinegar 9% – 50 ml.
  • Vodka 40° – 50 ml.

Algorithm:

  1. The process traditionally begins with soaking cucumbers, washing vegetables, herbs, leaves, peeling and chopping garlic. It’s okay if some seasonings are missing; this will not affect the final result much.
  2. The containers, as in previous recipes, need to be sterilized (over steam or hot air in the oven).
  3. Place some of the prepared seasonings on the bottom. Next add tomatoes and cucumbers. Again – part of the seasoning. Top with vegetables.
  4. Boil water in a saucepan or kettle. Pour over the prepared vegetable beauty.
  5. After 10 minutes, start the marinade: drain the water (now into the pan). Add the required amount of salt and sugar. Boil again.
  6. Filling it with hot water a second time (now with marinade) allows you to do without sterilization.
  7. All that remains is to cover the jars with sterilized lids. Cork and hide under a blanket for a day.

Beautiful, fast, and most importantly, easy!

  2. Place vegetables, chopped herbs, garlic cloves and seasonings in jars.
  3. Pour boiling water for the first time for 5-10 minutes.
  4. Pour the water into a saucepan and bring to a boil. Fill a second time.

Cooking time: 60 min

The time has come when there are plenty of cucumbers, tomatoes, and peppers. But I want these vegetables to please not only in the summer, but also. Therefore, you need to take care of this in advance. An excellent solution to this issue would be a great salad that can be rolled into jars and stored all year round in a cool place. In order for your preserves to last for a long time, you need to thoroughly wash all vegetables, sterilize jars and lids.

We are preparing a salad of cucumbers, tomatoes and peppers for the winter.

Ingredients:
- cucumbers – 5 kg,
- tomatoes – 2 kg,
- sweet pepper – 8 pieces,
- hot pepper – 2 pieces,
- garlic – 2 heads,
- sugar – 200 grams,
- salt - 2 tablespoons,
- vinegar – 200 grams.

Cooking time: 1 hour.
Yield: 6 liters.

Step-by-step recipe with photos:

For a salad of tomatoes and peppers for the winter, take 5 kg of fresh cucumbers. It is not necessary to take all the cucumbers evenly. Cut them into circles of 3-5 cm each. If the cucumber is very large in diameter, then you can cut it in half.

Then cut 2 kg of tomatoes into cubes of 5-7 cm.

Take 8 sweet peppers, remove seeds and cut into small strips, approximately 5 cm long and 3 cm wide.

Finely chop 2 heads of garlic and 2 pieces of hot pepper, peeled in advance, into any shape.

Then prepare 200 grams of sugar, 200 grams of vinegar, 2 tablespoons of sugar.

When all the ingredients are prepared, you can begin the process of preparing a salad of cucumbers, tomatoes and peppers. Take a saucepan with a capacity of about 8 liters.

First add tomatoes, bell peppers, garlic, hot peppers, salt, sugar and vinegar. Mix everything and cook over low heat for 15 minutes. Then put the cucumbers in the pan.

Tip: first add half of the cucumbers, stir, and then add the rest. Cook the cucumbers for another 15 minutes. You can determine the readiness of cucumbers by color. As soon as they turn golden, you can turn off the salad and put it in jars.
Be sure to sterilize the jars first. To do this, pour some water into a metal kettle and bring to a boil. Remove the lid of the kettle and invert the jar over the steam to thoroughly sterilize it. Be careful not to burn your hands.

Tip: you can put a ladle in the kettle and put a jar on it. Sterilize each jar for about three minutes. Place the lids on the bottom of the kettle, this way they will also be sterilized.

Place jars with metal lids and leave them to cool for a day. Then the finished salad of cucumbers, tomatoes and peppers can be put away in a cool, dark place.
Let's remember that last time we stocked up
