For the dish, you can use minced meat from various types of meat, not only lamb. Moreover, lamb meat is quite fatty, and if you want something more dietary, then chicken or turkey is ideal. The taste of fresh herbs will make the taste of the finished dish even more original and varied. The ideal side dish for a Caucasian meat dish is vegetables, fresh or grilled over coals.

Ingredients

  • 350 g minced chicken
  • 1 large onion
  • 3 sprigs parsley
  • 3 sprigs purple basil
  • 1 tsp. salt
  • 0.5 tsp. spices (ground coriander, black pepper, red pepper, cumin)
  • 3 tbsp. l. vegetable oil

Preparation

1. Take ready-made minced chicken, although it’s better to make it yourself. It's simple - grind pieces of chicken meat through a meat grinder, maybe with skin and pieces of fat. More fatty minced meat will yield juicier lula kebabs.

2. Peel and finely chop the onion. Wash the sprigs of greenery, dry them and chop them finely.

3. In a convenient bowl, combine minced chicken, chopped herbs and chopped onions.

4. Salt the minced meat and add spices - optional ground red and black pepper, ground cumin and coriander. It will be better if you grind the grains in a mortar - such spices are much more aromatic than ready-ground ones.

5. Mix all the ingredients, then let the minced meat stand in the refrigerator for a while - this will make it more viscous and sticky. With wet hands, form oblong kebabs and stick them on wooden skewers.
