Recipe for Caesar salad with shrimp and croutons

Royal Caesar has a special sauce and unique taste. The dish combines all the ingredients harmoniously, and cooking will bring a lot of pleasure.

Set of products for 4 servings:

  • To give the shrimp a spicy, unique flavor, they need to be marinated. To do this, mix all the above ingredients. Pour the marinade over the shrimp, stir and marinate for a couple of hours in the refrigerator.
  • To prepare flavored vegetable oil for Caesar sauce, peel the garlic and finely chop it. Fill it with refined olive oil and leave for a couple of hours.
  • Cut the baguette into cubes with sides 1 cm, brown in the oven at 200 degrees. When the crackers are lightly browned, rub each one individually with a clove of garlic and season with a mixture of Provençal herbs.
  • Drain the seafood. Fry them in a hot frying pan without oil for about 1-3 minutes (the larger the shrimp, the longer it will take to fry).
  • Separately, prepare the sauce in a deep bowl. For it, boil a soft-boiled egg, immediately remove the yolk from it and start preparing the dressing based on it. First, add the mustard, then little by little pour in the mixture of olive oil and flavored sunflower oil and at the same time whisk vigorously. Pour Worcestershire sauce into the resulting semi-liquid mass in parts so that the dressing does not separate. At the end add a little salt.
  • Soak the lettuce leaves in cold water for half an hour. This will keep the greens juicy and crispy. Then dry the leaves and tear them into medium pieces. Place the greens on a plate and drizzle with the prepared Caesar dressing.
  • The next layer is to place marinated fried shrimp, which we also coat with sauce.
  • Cover the seafood with grated Cheddar cheese (you can cut the cheese thinly if desired).
  • Place toasted pieces of bread on top and drizzle with dressing. The crackers should only be saturated with dressing on top and remain crispy in the middle. Therefore, without delay, serve the salad immediately after assembly.
  • Caesar salad with shrimp and chicken is best prepared with large king prawns. It is better to use fresh, crispy salad leaves for this dish. The best varieties are romaine and iceberg. Caesar salad with shrimp calorie content allows you to eat the dish even for those who are on a diet. Bon appetit everyone!

    Those who say they weren't impressed by the shrimp Caesar salad probably had it made with boiled shrimp and topped with store-bought dressing. On an ordinary day, of course, you can eat it this way, but for a festive occasion we will prepare a real Royal Caesar with shrimp.

    Ingredients for 2 full servings of Caesar salad:

    1 bunch of lettuce leaves,
    Cheddar cheese - 50 g,
    unboiled or boiled-frozen shrimp without shell 300 g (whole you need about 600 g),
    1 small elastic tomato or half a fleshy red pepper (you can do without them)
    Shrimp marinade:
    honey - 1 teaspoon,
    lemon juice - 1 teaspoon,
    olive or vegetable oil - 1 tablespoon,
    salt,
    freshly ground pepper mixture.
    For croutons:
    150 g baguette without crust,
    garlic - 1-2 cloves,
    dry Provençal herbs on the tip of a spoon (optional)
    For the Caesar sauce
    1 egg, room temperature,
    mustard - 1/4 teaspoon,
    lemon juice - 1 teaspoon,
    olive oil "Extra vergine" - 20 ml,
    refined sunflower oil - 40 ml,
    1 clove of garlic,
    Worcestershire sauce - 1 teaspoon,
    salt

    Any shrimp will do for the salad, but large king prawns are more convenient to use, since we will have to peel all of them by hand.

    We clean the shrimp, leaving only the meat. Be sure to remove the intestine, otherwise the shrimp will not look very aesthetically pleasing in our salad. Prepare the marinade for shrimp: mix a teaspoon of honey and lemon juice, a tablespoon of olive oil, a pinch of salt and a mixture of red, black, white pepper and paprika, pour in the shrimp and keep them in the marinade for a couple of hours.

    Pour 40 milliliters of refined sunflower oil into a finely chopped clove of garlic and also leave to steep for a couple of hours; we will need this oil for Caesar sauce.

    Cut the baguette or white loaf into small squares, dry them in an oven preheated to 200 degrees Celsius until lightly browned. Gently rub each cracker with garlic. You can fry them in a frying pan in garlic-flavored oil, but then the crackers will turn out greasy. It’s also delicious, but not every stomach and not every waist can handle such crackers. Sprinkle everything with Provençal herbs.

    Drain the marinade from the shrimp and fry them lightly in a preheated dry frying pan, 1-3 minutes on each side, depending on the size of the shrimp. Look, don't try the shrimp now, otherwise there will be nothing left for the salad, they are very tasty :)

    Prepare the sauce: wash the egg thoroughly with soap and boil it soft-boiled. We immediately remove the yolk and use it for the sauce. Add mustard, lemon juice, and drop by drop, whisking, a mixture of olive oil and garlic sunflower oil prepared in advance. You should get liquid mayonnaise. Add Worcestershire sauce to it, whisking, adding salt if necessary. Add everything carefully, drop by drop, otherwise the sauce will separate.

    Soak the lettuce leaves in cold water for 10-20 minutes, dry them with a paper towel and tear them into small pieces with your hands. Place the salad on a plate and drizzle with Caesar dressing.

    Place marinated fried cooled shrimp on the salad and sprinkle with sauce again.

    For shrimp - thinly chopped or finely grated Cheddar.

    For cheese - crackers. Sprinkle the salad with sauce again, mix gently and serve immediately. Ideally, the crackers should get a little wet on the outside, but not lose their crunchiness.

    It’s delicious to add a little red pepper or tomato pulp without skin and juice to Caesar, but you can do just fine without them.

    A very tasty salad, but despite the abundance of greens, it is quite high in calories.

    Previously, we have already looked in detail at how to make it yourself, but today we will give preference to another version of this popular dish.

    Caesar salad with shrimp classic recipe

    1. We defrost the shrimp in advance, wash it, and then peel it, leaving the tails if desired. Place the prepared seafood into a deep bowl, sprinkle with salt and freshly ground pepper, and pour in lemon juice. Add liquid honey and one tablespoon of olive oil. Mix the shrimp thoroughly and leave in the marinade for half an hour.
    2. To prepare the croutons, in a separate bowl, mix two tablespoons of olive oil with garlic cloves, peeled and passed through a press. Let the garlic-oil mixture sit for 40-60 minutes. If you wish, you can speed up the process by placing the mixture in the microwave for 20-40 seconds. When heated, the garlic will quickly release its aroma into the oil and you won’t have to wait a long time.
    3. Pour the oil saturated with garlic smell onto the surface of a clean frying pan (the garlic itself must first be caught, otherwise it will burn). After removing the crusts, cut the bread into small cubes and fry in hot oil until golden brown. Sprinkle the finished hot croutons with salt.
    4. We wash the salad leaves, dry them, tear them with our hands and distribute them on plates. To enhance the taste, you can first rub the dishes with a clove of garlic cut into 2 halves. Lightly drizzle the leaves with Caesar salad dressing, the recipe for which is described in detail.
    5. Place the marinated shrimp on the hot surface of the frying pan (if the pan has a non-stick coating, we do without oil). Fry for literally 2-3 minutes on each side (until the gray tint completely changes to pinkish).
    6. Place cooled croutons and warm shrimp on a layer of lettuce leaves.
    7. We complement the salad with boiled quail eggs, cut in half lengthwise and bright cherry slices.
    8. Pour the dressing over the dish and sprinkle with fine parmesan shavings.

    Caesar salad with shrimp is no less popular than the classic version with chicken. Below are several variations of preparing the dish, as well as recommendations for preparing individual components of the salad - croutons and sauce.

    • fresh lettuce leaves;
    • olive oil;
    • raw regular shrimp - standard packaging;
    • eggs;
    • black pepper;
    • cherry;

    • Caesar sauce;
    • for boiling shrimp, a few sprigs of dill, 2-3 peas of allspice, bay leaf.

    First, we prepare the shrimp: we clean the shell, head and insides, at this time we boil the broth with a bay leaf, several sprigs of dill, a couple of allspice peas. As soon as the broth boils, lower the shrimp into it and cook for 3-4 minutes after the water boils. Mix the prepared shrimp with a dressing of lemon juice, pressed garlic, oil and pepper, let them soak for a quarter of an hour.

    Cut the salad into medium cubes or tear it by hand.

    Boil the eggs until done. Clean and cut into quarters. If you use quail, it will be enough to divide them into halves.

    We put greens and shrimp on a salad dish, decorate it with cherry halves and pieces of eggs. Place the sauce in the center.

    With the addition of crackers

    Traditionally, Caesar salad, be it classic, with chicken or shrimp, is served with aromatic crispy croutons. They can be purchased at the store. Products that belong to the supermarket’s “own production” are suitable. Simple snack crackers will not add the desired flavor to the dish.

    You can also make crackers at home:

    1. Cut the wheat loaf into cubes, heat a few drops of oil in a frying pan, squeeze out a garlic clove and fry the crackers until golden. There is no need to add a lot of oil during frying.
    2. Remove the crust from the wheat bread, cut into thick slices, divide into cubes, place on a baking sheet, lightly sprinkle with olive oil, sprinkle with a little Italian herbs and pepper, and place in the oven at 180 degrees. Depending on the brand and model, the oven may “fry” stronger or weaker, so you need to monitor the brownness of the crackers.

    On a note. Wheat bread is usually used, but if desired, it can be replaced with rye bread. To make homemade crackers, it is recommended to use yesterday's bread - the crumb becomes denser and easier to cut.

    The classic, most common sauce for Caesar with shrimp is suitable:

    • egg;
    • tsp Worcestershire sauce;
    • 3 tbsp. l. olive oil;
    • half a lemon;
    • salt, pepper - 1-2 pinch each;
    • 1 tsp. ordinary mustard.

    The egg should be immersed in boiling water for one minute and then immediately removed and cooled in cold water. Then peel and place in a bowl for mixing the sauce. Add freshly squeezed lemon juice and other ingredients there. Add lemon juice in small portions so as not to “over-acidify” the sauce. Work thoroughly with a blender - the mass should thicken and lighten.

    On a note. If desired, you can add a little French (grainy) mustard.

    Calorie content of the finished dish

    The general opinion about Caesar salad is that the dish is considered dietary. However, this is not entirely true, and its calorie content is quite high. Of course, vegetables have very low calorie content, and shrimp are not very high in calories. But many people forget about the sauce - they add butter, sour cream, and sometimes mayonnaise.
