Ingredients

  • cottage cheese - 400 g;
  • salt - a pinch;
  • sugar - 2 tbsp;
  • starch - 1 tbsp;
  • semolina - 2 tbsp;
  • sour cream 1 tbsp. (if the cottage cheese is dry);
  • wheat flour - 2 tbsp. into the dough + 1.5 tbsp. for powder.

Preparation

Place the cottage cheese in a bowl (preferably a deep one) in which you will knead the dough. Grind the cottage cheese through a sieve, thanks to this you will get a more homogeneous curd mass without grains. Add the required amount of sugar and salt to the bowl, mix everything with a spoon or silicone spatula. Cottage cheese can be used as medium-fat or low-fat.

On a note: If the cottage cheese is very dry, add a little sour cream or homemade yogurt.

Add semolina to the cottage cheese, as well as starch (you can use corn or potato). Stir the curd mass until a homogeneous consistency is obtained.

Wheat flour must be sifted through a strainer, then added in portions to the curd mass. At the same time, continue stirring everything with a spoon or spatula.

Then place the resulting mass on a board dusted with flour. Knead the dough with your hands until it is dense and does not stick to your hands. If necessary, add flour.

Divide the curd dough into four parts, then roll each into oblong ropes.

Step 1 Preparing the Potatoes

IMPORTANT!!! When you pinch the dumplings, make sure that there is no air left in the dumplings. During cooking, the air will increase and the dumpling will open up.

Mash the cottage cheese in a bowl. It will be convenient to do this using a fork. While preparing the curd mass, add a pinch of salt and sugar to taste.

With cottage cheese and semolina

Thanks to semolina and starch, which are part of the dough for these dumplings, the dish has a delicate, airy consistency and a rather interesting taste. These lazy dumplings will be a wonderful dessert if you cook them.

To do this you need the following products:

  • two hundred and fifty grams of cottage cheese;
  • semolina - forty grams;
  • sugar - 1-2 tablespoons;
  • three quarters of a tablespoon of starch;
  • half a teaspoon of salt.

And as in all previous cases, first fill the pan with water (1 liter) and place it on the stove so that the water boils. Also, don’t forget to salt the water for the dumplings. While the water is coming, we will prepare a plastic base for lazy dumplings.

Finely crush the cottage cheese with a blender or rub it through a sieve. In a deep bowl, mix cottage cheese, salt and sugar. Add starch to the resulting mixture and add all the semolina specified in the recipe. After introducing these ingredients, the dough will become dense and can be kneaded with your hands.

We pinch off the dough from the common layer. Roll the piece into a ball with a diameter of one and a half centimeters and place the ball on a board sprinkled with flour. We continue until the entire amount of dough turns into neat, identical balls.

Most likely, by the end of this lesson, the water has boiled, and it’s time to begin the actual preparation of lazy dumplings from semolina and cottage cheese, namely, boil them in boiling water.

Pour the dough balls into the pan and, using a slotted spoon or spatula, separate them from the bottom of the pan so that they do not stick. Dumplings should be cooked over moderate heat. As soon as they rise to the surface, wait two to three minutes and take them out onto a plate. This can be done in two ways: use a slotted spoon or simply drain the water from the pan. You can serve the finished dish with melted butter, condensed milk, confiture and other sweet additives.

  • onions - 3 pieces;
  • potatoes - 9 medium;
  • vegetable oil for frying onions - 3 tablespoons.
  1. Mix water with salt.
  2. Make a well in the sifted flour and, gradually adding liquid, knead a dense dough.
  3. Place the dough in a bowl and cover with a lid for half an hour.
