Bake pancakes without eggs. Fluffy kefir pancakes without eggs. Cottage cheese pancakes without eggs

Today we are preparing fluffy kefir pancakes without eggs. This recipe came out of my mother's old cooking notebook. Every housewife probably had such notebooks, and special recipes were written there. They are truly special because, despite time, they have not lost their relevance.

These pancakes are prepared without eggs or sugar, which is quite unusual. But they are in many ways superior in taste to those that include a more extensive list of products. They turn out fluffy, spongy, with a thin crispy crust. The absence of sugar does not affect the taste at all. They can be eaten with or without additional sweet fillings. In most cases, the taste depends on the kefir you use. To make pancakes you only need two main ingredients: flour and kefir.

Below I will show in detail how to bake pancakes with kefir so that they turn out just as tasty and fluffy. All the processes are really simple and quick, and if desired, part of the dough can be left in the refrigerator to be used a little later.

Lush kefir pancakes without eggs are perfect for breakfast or as a dessert if you top them with honey, jam or jam. I also have another excellent recipe, according to which they are obtained and prepared with the addition of kefir.

Ingredients:

  • Wheat flour – 1 tbsp.
  • Kefir – 200 ml.
  • Soda - a pinch
  • Salt - a pinch
  • Vegetable oil - for frying

How to cook lush pancakes with kefir

The dough for fluffy kefir pancakes is easy to prepare. First of all, pour kefir into a bowl. It can be of absolutely any fat content, it doesn’t matter. Then I add a pinch of salt.

Then I sift the flour through a sieve and pour it into a bowl with kefir.

Using a whisk, mix the mixture until smooth. There should be no lumps in the dough. The consistency can be adjusted by adding a little more or less flour. The thickness of the finished products will depend on this. That is, if you want thicker pancakes, add a little more flour. At the end I add soda and mix again.

Afterwards I let the dough rest for a while. It dries out quite quickly, so it’s more convenient for me to transfer the mixture to a bag or a bowl covered with cling film.

And it’s easier to pour the dough out of the bag by cutting a small hole, then their shape will be beautiful. It is also more convenient to store it in the refrigerator until ready.

This is the most important thing to get the right eggless pancakes according to this recipe. They need to be formed in a preheated frying pan with vegetable oil. I fry them on both sides until golden brown.

They increase in volume, so you should not form them tightly together, otherwise they will stick together. I place the finished products on a paper towel or napkin to remove excess oil. Now you know how to cook kefir pancakes without eggs.

As you can see, the recipe is very simple, affordable and budget-friendly. Prepare them and please your loved ones with wonderful pancakes. These fluffy eggless kefir pancakes fly off the plate in an instant, and you immediately want to make more. Bon appetit!

3. add sifted flour. Mix the resulting mass thoroughly with a silicone spatula or spoon. The dough should be airy and homogeneous.
4. Heat the frying pan well and add vegetable oil. Place 1 tablespoon of dough at a time. Bake the pancakes until golden brown on both sides. Bon appetit! Breakfast@bon.

Lush pancakes without eggs on kefir - preparation process:

1. Pour kefir into a deep bowl, add soda, salt and sugar. Stir.

2. Now gradually add flour, kneading the homogeneous dough with a spoon, whisk or mixer at minimum speed. It should have the consistency of very thick sour cream.

3. Leave for 5-10 minutes until small bubbles appear on the surface of the dough (this is done so that the soda begins its action, as a result your pancakes will turn out more fluffy).

4. Heat a frying pan with vegetable oil; the frying pan should be hot enough, especially if it is without a non-stick coating, otherwise the dough will stick to its surface.

5. Using a tablespoon or a small ladle, place the pancakes into the frying pan at a distance from each other (they will expand slightly) and fry on both sides under the lid until golden brown.

6. That's it! Our lush pancakes without eggs on kefir are ready. Bon appetit!

Friends, don't be embarrassed by the fact that there are no eggs in the recipe. You only have to make these pancakes once and they will become a favorite recipe for you and your family. Minimum ingredients and maximum pleasure - that's for me!

So, if you want to try making this recipe, but you don’t have the required weight of kefir. No problem. All fermented milk products will work for these pancakes: sour cream, fermented baked milk, bifidok... I often mix fermented baked milk and homemade kefir (yogurt). It is important that the kefir is at room temperature.

Arm yourself with two bowls. In one you have kefir, and in the other combine all the dry products: flour, soda, salt and sugar. More often I cook pancakes without eggs using half a liter of kefir, but in the photo there is only half a serving. Yes, the kids wanted something for tea and now 10 minutes and the pancakes are ready for tea or with compote.

Mix dry products with a whisk.

Then pour in kefir.

Mix all products until thick sour cream forms. There is no need to wait for the dough to rest. You can fry the pancakes immediately.
Place the frying pan on the fire and pour in the vegetable matter. oil. After that, turn the heat to medium and, using a tablespoon, place the dough into the hot oil.

Fry the pancakes without eggs on both sides until golden brown. How delicious!

After frying, transfer the pancakes to a plate lined with a paper towel or napkin.

After cooling or on the second day, the pancakes do not become stale, but remain soft.

Friends, help yourself! Either with strawberry jam or ice cream! Tasty! Mmm!

There is an opinion that airy, fluffy pancakes can only be made from... Everything would be fine, but you don’t always want to tinker with it, and it’s always a pity for the dough to rise. Therefore, my “relationship” with making pancakes somehow didn’t work out until my wonderful colleague, my respected mentor at work, Natalya Vasilyevna, told me how to make fluffy pancakes with kefir without eggs and without yeast! The cooking process has become so simplified that I spend no more than twenty minutes from opening a jar of kefir to frying the last pancake! We already have two unusual pancake recipes in our arsenal: chocolate-banana pancakes without eggs and milk and strawberry pancakes, also without animal products.

Of course, there are a huge number of options for delicious pancakes. Surely you also have your own favorite and proven method? Even if this is the case, I advise you to try fluffy kefir pancakes according to the recipe of our subscriber Katyusha, who skillfully handles any dough, be it holiday pies, cakes or pancakes and pancakes.

The tender pulp of the grated apple adds a pleasant fruity sweetness to the “fried flatbreads.” You can easily make your own changes by mixing the dough not with applesauce, but with pumpkin, banana, pear, or adding citrus fruits. You don't have to use additional ingredients - bake pancakes without fruit.

Ingredients:

  • apples – 2-3 pcs. (sweet and sour variety);
  • kefir – 1 tbsp. (volume 250 ml.);
  • flour – 2 tbsp;
  • soda – 1 tsp;
  • sugar – 1-2 tbsp. l.;
  • vegetable oil for frying pancakes.

Kefir pancakes without eggs, fluffy! Recipe with photo

Remove the seeds and core from the apples. Grate the fruits on a coarse grater; be sure to use the juice that will be released when chopping the apples.

Add kefir to the applesauce and add baking soda. Mix the three ingredients well.

Add sugar. Mix. Now you can taste the dough for sweetness; if your apple variety is too sour, then you can add 1 tbsp. l. Sahara.

Add flour, preferably sifted. Pour in small portions so that all ingredients are mixed with flour gradually, this way you can avoid lumps, which are then inconvenient to “break up”.

You will be able to knead a thick dough. The consistency, as is customary for pancakes, is thick sour cream.

Heat a frying pan with vegetable oil and spoon out the pancakes. Fry on both sides over medium heat. Everything will be simple here: put a portion of dough in hot oil, wait a few minutes, the dough is fried, does not stick, as browned - you can turn it over and repeat the operation.

Delicious, rosy, fluffy kefir pancakes with apples are ready! As soon as you take it out of the pan, immediately put it on the table!

Don't forget to pour honey into the bowl, separately sour cream and hot tea into your favorite cups.

Bon appetit!

Video Lush pancakes without eggs in 10 minutes!!!

My previous attempt to make fluffy pancakes without eggs a la American pancakes was not successful (thanks to which we now have a recipe for pumpkin whey pancakes, which is a plus :).

But I didn’t give up and continued to gnaw on the cactus, in the sense of experimenting. And, you know, the folk wisdom about the inevitability of the result of long torment worked. I can now proudly say that I did them in every sense!

Who wants to know how to bake thick and fluffy American kefir pancakes without eggs? Follow me, please…

For thick and fluffy kefir pancakes we will need:

  • 0.5 l. kefir;
  • 2 cups of flour;
  • 3 tsp Sahara;
  • a pinch of salt;
  • 1 tsp soda;
  • 2.5 tsp vegetable oil;
  • honey, syrup, jam in any quantity.

First, dissolve soda, salt and sugar in kefir. This is a piece of cake for us!

Add flour to the kefir and use a regular fork to mix everything quickly so that there are no lumps.
So we have the dough for fluffy kefir pancakes. Somehow everything is suspiciously easy and simple, right?

There is no need to wait for a catch, there won’t be one. Everything is actually very simple. Heat up the frying pan. Add vegetable oil to the dough and mix it again, after which we put the dough on the frying pan in semicircular ovals (semi-oval circles?) - in the shape of large pancakes, in general.

Cover the pan with a lid and fry the pancakes over low heat until the surface of each pancake stops spreading. And as soon as it stops, we turn our pancakes over. You can already see how lush, thick and beautiful they are.

We continue in the same spirit. The dough is getting smaller and smaller, and the stack of fluffy pancakes is getting higher and higher...

The most wonderful thing is that these pancakes themselves are not at all sweet, which means you can top them with honey, syrup, jam or condensed milk, and then imagine how, on an early summer morning, a waitress at an American diner puts a plate of pancakes in front of you and says: Enjoy! That is, bon appetit!

Good afternoon, dear readers. Fluffy, ruddy kefir pancakes are a delicious breakfast for the whole family, a wonderful tea treat for unexpected guests, and a traditional and beloved dish during the Maslenitsa celebration.

Yes, not only delicious pancakes are prepared for Maslenitsa, but also pancakes traditionally. A very tasty delicacy, especially when they are piping hot, with a crispy crust, and with honey, or jam, condensed milk or sour cream...

But not only on Maslenitsa; for example, on March 8, you can please your household with delicious and fluffy pancakes. Especially if a man prepares them for the morning. And how many different recipes there are, it’s simply crazy. For example, with greens inside, with raisins and jam, with cabbage and zucchini, with an apple and so on.

But many times I tried to bake fluffy pancakes, and the result was the same: as soon as they cooled, they began to fall in volume. Damn, what a shame it was when they started to deflate right before our eyes. Although the taste remained the same, very tasty, I wanted to achieve splendor.

Let's not beat around the bush, grandma helped us by explaining a few simple rules. I'm sure everything will work out for you. Let's look at several recipes with fluffy pancakes that we have tested.

By the way, why do you get fluffy pancakes with kefir or why do you get pancakes with holes with it? It’s just that kefir in the dough serves as a kind of leavening agent and, thanks to natural fermentation processes, the dough becomes bubbly. This is what makes the dough and final product fluffy.

So if you have some kefir in the refrigerator, then be sure to try making fluffy kefir pancakes according to the recipes below.

This recipe is a classic or standard. You could say the basis. According to this recipe, we prepare all other versions of pancakes. Of course, some ingredients can be added or changed, but there are still a few important points in the process of making pancakes. We will also talk about them along the way.

We will need:

  • Kefir - 1 glass (250 ml);
  • Flour - 7 tablespoons;
  • Granulated sugar - 2 tablespoons;
  • Egg - 1 piece;
  • Salt - 0.5 teaspoon;
  • Baking soda - 0.5 teaspoon.

Before starting cooking, you need to remove kefir and eggs from the refrigerator. They should be at room temperature.

It is best to take kefir that lasts for 2-3 days. Sometimes it even turns out like this: they say that the kefir will go bad, what should I do? Yeah, you can make delicious pancakes.

Now break the egg into a deep bowl, add sugar and beat with a whisk or fork.

Pour kefir into the bowl and mix well, beat. You can add vanilla sugar or vanillin for flavor, as you wish.

Time for torment. To make the dough fluffy, be sure to sift the flour through a sieve or a mug with a sieve. This will also help avoid lumps in the dough. Mix everything thoroughly.

Flour can be added in portions, stirring constantly.

Only now can you add soda, but not before, this is important.

By adding soda earlier, the pancakes will not turn out fluffy, since by the time of frying the chemical reaction with the release of gas will end.

And by adding soda at the very end, the chemical reaction will take longer, so the dough will be more fluffy.

Step 5.

The dough should not be liquid. It should not spread in the frying pan, but its structure should resemble rich sour cream, which flows heavily from a spoon. The correct consistency of the dough is the key to successful pancakes.

If the dough is runny, add flour a little at a time.

Heat up the frying pan. If we want a crust, then pour in vegetable oil, so the crust will be crispy. Without oil, the pancakes have a velvety surface.

serving - one tablespoon

Now let's do a test. Scoop the dough with a tablespoon and place it in a frying pan, frying on both sides.

This way we can check whether there is enough flour, salt, sugar in the dough. Based on the first test, you can add what is missing to the dough, mix everything thoroughly and start baking.

It is better to fry the pancakes over medium or slightly less heat. This way they won’t burn on the outside and will bake on the inside. Fry the pancakes on both sides until golden brown.

That's all, we prepared fluffy kefir pancakes. You can seat everyone at the table, pour tea, get honey, sour cream, jam, and so on. Enjoy your tea!!!

After the flour, add soda and mix thoroughly. Use a spoon to check for consistency so that it is not liquid; if necessary, add a little more flour.

Now heat the pan and let the dough sit for 5 minutes.

Pour oil into a frying pan and place one heaping tablespoon of dough onto it. Fry over medium heat, fry until golden brown.

Pancakes with banana (video).

This is also a very interesting recipe, the kids really like it too.

Fluffy pancakes made with kefir and yeast, without eggs.

Here is another good recipe without eggs, but using yeast. It is better to use raw yeast. We tried it from dry ones, but it didn’t work out that way.

We will need:

  • Flour - 1 glass;
  • Kefir - 200 ml;
  • Pressed yeast - 8 grams;
  • Sugar - 2 teaspoons;
  • Salt - a pinch;
  • Vegetable oil for frying.

Take kefir and heat it to just above room temperature. You can simply take it out of the refrigerator in advance, or you can warm it up slightly. The body is needed for the yeast to begin to come to life.

Add sugar and yeast to kefir. Stir well until the yeast dissolves and begins to ferment. Place the bowl in a warm place until foam appears.

Add the sifted flour and salt and stir thoroughly until all the lumps disappear. The dough should be as thick as good sour cream and should slowly slide off the spoon. Cover the dough and place it in a warm place to rise.

After the dough has risen and covered with bubbles, you can immediately begin baking the pancakes. Heat a frying pan over medium heat and add vegetable oil. Thanks to their porous structure, fluffy kefir pancakes will act like a sponge and absorb oil, so watch the amount of oil in the pan so that the pancakes don’t burn.

Fry the pancakes on each side until golden brown. They should also be baked inside. To find out, take the first pancake that has been fried and break it in half, the middle should be well baked. If there is still raw dough inside, and the outside is already golden brown or even burnt, then you must turn down the heat on the burner.

With the next batch of pancakes, wait until the pan has cooled slightly and try again. Medium heat is usually required for successful pancakes.

Place the finished golden brown pancakes on a plate or in a bowl. Serve while still hot and with all kinds of sauces and concoctions. Bon appetit!

Fluffy kefir pancakes without eggs: recipe with photos step by step

This is a budget option for a dish that almost everyone will like. Pancakes are prepared quickly, easily and do not require a large amount of ingredients. To begin, prepare the following ingredients:

  • kefir - 400 ml or one packet;
  • flour - 450 gr.,
  • soda - 5 gr. or 1 tsp;
  • sugar - to taste;
  • vegetable oil - maximum 200 ml.

If you have all of the above products, you can prepare our dish.

Preparing products for the test

Pour kefir into a deep container. This can be either a bowl or a pan. Add soda there, mix well and leave to infuse for 5-10 minutes. After time, add sugar (about 4 tbsp). Stir the liquid and taste. If you like sweets, you can add more sugar.

When the mixture is well mixed, set it aside for 5 minutes. Meanwhile, sift the flour. Then it can be gradually added to the container where the kefir was poured. Mix the dough with a wooden spatula. Watch carefully to ensure no lumps form.

Add flour until the dough is smooth and has the consistency of sour cream. It should turn out airy and beautiful.

Now we have everything prepared to make lush ones. The dough recipe is not at all complicated, all that remains is to fry it.

Preparation

The initial stage has been completed. The ingredients were prepared and the dough was made. Now you can put the frying pan on low heat. Pour vegetable oil into it and wait until it heats up.

Take a tablespoon with which you need to put the dough on the pan. During frying, the pancakes begin to rise and become airy. When they turn golden on one side, carefully turn them over with a wooden or silicone spatula.

Wait until the pancakes are fried on the other side. Now you can take it out into a dry container. You have got beautiful and fluffy kefir pancakes without eggs. The recipe, as you can see, is not at all complicated and even a schoolboy can handle it.

Add apples

The results are sweet, tasty and healthy, about the same as described above. First, pour the kefir into a bowl, add soda and sugar. Let the mass infuse. In the meantime, you need to wash the apples, peel and core them.

Fruits can be cut into small cubes or grated. The taste is different, so you can make two versions with one serving. Then find a more delicious recipe for yourself.

Apples need to be added to the mass where the kefir is located. Only then add flour. There is no need to make the dough too thick, as it will become rubbery. Mix it well until smooth. Now you can fry as described above.

You will get very tender, unusual and incredibly tasty, fluffy kefir pancakes without eggs with apples. They are in perfect harmony with liquid honey, jam or preserves.

If you prefer a sweet and sour taste, add a little lemon juice, which will add zest to the dish.

Many experienced chefs know the secrets of cooking, without which the dish does not always turn out quite tasty, nutritious and healthy. For example, when making pancakes without eggs, add a little more flour than usual. After all, they can become more rigid and lose their splendor.

For a more pleasant aroma, add a little vanillin. And if you don’t want too sweet pancakes, add 20-40 ml of lemon juice. Taste periodically to ensure they don’t turn out sour.

The main secret for lush pancakes is properly prepared dough. It should have a consistency similar to thick, fatty sour cream. When the dough is placed on the pan, it does not spread. Only then can you be sure of the result.

It is very important to maintain the correct temperature. You cannot use products that have just been taken out of the refrigerator. They should be at room temperature.

It is important that the dough rests for about 30 minutes. Remember that after it has rested, do not stir it any more, but immediately start frying. Otherwise they will not rise and be as fluffy as expected.

Fantasy is the success of every cook. For a more pleasant taste and aroma, add raisins, dried apricots, prunes and much more to the pancakes. The main thing is that there are not too many additional products, as they will interrupt the taste of the pancakes.
