People who often make pies know a large number of different recipes not only for the filling, but also for the dough. Often certain ingredients are not available, and because of this you have to experiment. The experiments come out quite acceptable, and most often very tasty. On our agenda is meat pie with kefir. Kefir dough is used for both sweet and savory pies. It has some airiness and tenderness, unlike other types. Therefore, it is most often used in recipes for sweet pies. But you shouldn’t limit yourself to just this, you should always try something new, and the combination of such a delicate dough and meat filling will still play a good role in the final impression of the dish.

We recommend this recipe for familiarization and subsequent use.
The fact that we will be baking with meat makes the dish quite satisfying. It can be used as dinner or as an extra snack. Apart from meat, the pie does not even require any other additional filling. Therefore, the recipe is simple, quick and dense. It can be consumed both hot and cold. A piece of this meat pie would be perfect for a good hearty breakfast. But you and your household will like it so much that it will be swept off the table very quickly. Let's find out what we need and how we can mix and cook it all so that it's quick and tasty!

Ingredients needed to make the pie

1. Kefir – 500 milliliters;
2. Butter – 150 grams;
3. Chicken egg – 3 pieces;
4. Wheat flour – 2 cups;
5. Sugar – 2 tablespoons;
6. Soda – 1 teaspoon;
7. Minced meat – 500 grams;
8. Onions – 1 onion;
9. Salt.

As mentioned earlier, there are few ingredients. The main part is still occupied by dough products. But everything is clear with them, they are quite standard. The question may arise - what kind of minced meat should I use? It's up to your taste, you choose. But it’s better not to take one type of meat. For example, beef alone is likely to be too dry. If you want to use minced beef, mix it with a small amount of pork, then the filling will become juicier and more interesting. You can take minced meat from some kind of poultry, for example, from chicken thighs. Or you can take a whole piece of meat and just chop it into small pieces. Let's start cooking the recipe!

Knead the dough

It will have a liquid consistency, so you need to immediately prepare a large bowl and a whisk. In it we will mix all the ingredients.

1. First of all, let's take on the eggs. They need to be shaken to mix the yolk with the white, and we also add flavor enhancers - sugar and salt. It is better not to add more sugar than required, but less is possible. Choose the amount of salt according to your taste. But don't overdo it.

2. Next we have kefir and soda. You can take kefir of any fat content. It should also be noted that not only fresh, but also slightly sour kefir works well. It is acceptable in the same way as in pancakes or cookies. The soda can be quenched in kefir in advance or poured together with the dairy product into a common container. Bring until smooth.

3. Next, we make the dough thicker by adding flour. It is better to sift it in advance by passing it through a sieve. This is done to saturate the ingredient with oxygen. And you need to add it in small portions, trying to break up all the lumps. For example, if we only have two cups of flour, then we can add a quarter or a third of a cup at a time. It is not necessary to make the texture as uniform as possible, but it is advisable to get rid of most of the lumps; you don’t want to chew just flour later, do you?

4. Another ingredient that may seem strange to some, but is still present in the recipe, is butter. It needs to be heated to room temperature, but not using a microwave or water bath, but just let it lie on the table and soften it. Its consistency should be like cream. The butter also needs to be mixed well into the dough in any way convenient for you. By the way, it can be replaced with margarine. After all the steps have been completed, put the dough aside for a while.

Preparing the filling

It has long been clear to everyone that before baking meat in a pie, it must first be half cooked. Otherwise, you will end up eating a half-baked product. Therefore, now we will fry our filling. It consists of two ingredients - minced meat and onions.

If you wish, you can add some spices that go well with the meat. This could be paprika, suneli hops, Italian herbs or, for example, dried garlic. It all depends on your tastes.

1. The only preparation before frying is peeling and slicing the onion. It’s better to chop it into small pieces so that you don’t feel them too much later, but only add more juiciness. The recipe calls for one onion, but if you are a fan of this vegetable, you can use more. The minced meat, of course, needs to be thawed before cooking. This also needs to be done without the help of third-party means, just bring it to room temperature, letting it melt on the table.

2. Next we start frying. It is better to take a frying pan with thick sides so that the heat in it is evenly distributed and preserved for a long time. Then, when we put a piece of minced meat on it, it will not cool down instantly, but will begin to fry immediately. In any case, we heat the oil in it, after which we send the onions first. We do not sauté it for long, waiting for it to become transparent. After which we immediately send our minced meat. Stirring constantly, bring it until the color changes. There is no need to fry it very much, we only need to bring it until half cooked. Then you can add seasonings and remove the filling to cool.

Baking a pie

1. You need to take some kind of large form. From the number of ingredients indicated in the recipe, we got quite a lot of both dough and filling. It doesn’t even have to be greased, because we have enough oil in the dough. Therefore, pour half of the entire dough onto the bottom and level it well.

2. The next layer is the filling, try to distribute it evenly. And cover everything on top with a layer of the remaining dough. Make sure it covers everything without leaving a single piece.

3. Now it's time to put the pie in the oven. The temperature there should be standard, about 180 degrees. Cooking time – until the crust is browned. But don’t overdo it, forty-five minutes maximum. After cooking, it slices beautifully and is easily removed from the mold. And what a scent it gives off!

This concludes the recipe for meat pie with kefir. It is very quick and simple, and will help you prepare a delicious surprise for yourself, your loved ones, and friends for a simple dinner or even for a holiday. Try making a pie using this recipe if you have a little extra kefir and a piece of minced meat left. You definitely won't regret it.

Don't forget to leave a comment, good luck and bon appetit!

Add the remaining ingredients for the dough and bring it until smooth. The dough turns out runny - the pie will be jellied.

Place the finished baked goods on a wire rack, cool slightly, cut into pieces and serve to your family.

Option 3: Kefir meat pie with fried filling

We use minced meat, but we will fill the pie not with raw filling, but with fried stuffing in a frying pan. Let's simmer the minced meat with onions, then fill the dough and close the pie. Then bake it in the oven.

Ingredients:

  • 0.5 l of kefir;
  • 150 g oil drain;
  • three eggs;
  • 260 grams of wheat flour;
  • 50 grams of sugar;
  • 11 grams of baking soda;
  • 0.5 kg minced meat;
  • 80 grams of onion;
  • spices.

Step by step recipe

Let's talk about which minced meat is best to use. Don't use beef - the pie will be dry. Add some pork to add juiciness. You can take homemade or prefabricated.

Break the eggs into a bowl, add salt and sugar and beat with a whisk.

Stir soda into kefir, let bubbles appear, and then pour the resulting mixture into the egg mass.

Add sifted flour, kneading into a homogeneous dough.

Bring the butter until soft, add to the dough and knead until smooth.

Peel the onions and finely chop with a knife.

We put a frying pan on the fire, heat the oil and put the onion in first and bring it to a transparent color. Now you can add the minced meat. Immediately mix it with the onion and fry until half cooked. Use a spatula to constantly break up large clumps of minced meat.

Finally add salt and pepper, mix and remove from heat. The filling must cool completely.

Take a baking sheet or large baking dish. Pour in half the dough and smooth it out with a clean spatula.

Distribute all the filling evenly and cover with dough.

We prepare the pie at a standard temperature of 180 C. We focus on the golden brown crust and turn off the oven. The main thing is to bake for no more than forty-five minutes.

We cut the pie and treat the family.

Option 4: Flavored meat pie with kefir

We will prepare the pie in such a way that the dough is crispy and the filling is juicy and aromatic. Before baking, brush the pie with sour cream and sprinkle with sesame seeds.

Ingredients:

  • two hundred ml of kefir;
  • 320 g flour;
  • 1 chicken egg;
  • 3 grams of baking soda;
  • thirty ml sunflower oil;
  • 6 grams of coarse salt.

Filling:

  • half a kg of minced meat;
  • 150 grams of onion;
  • 2 cloves of garlic;
  • half a bunch of dill;
  • 3 tbsp milk;
  • 6 grams of coarse salt;
  • a pinch of ground pepper.

Additionally:

  • 2 tbsp sour cream;
  • 2 tbsp sesame seeds.

How to cook

To make the kefir dough more airy, add a little soda. This is an excellent alternative to yeast, which not every housewife likes to tinker with.

Pour kefir into a bowl, beat in an egg, add salt, soda and add oil. Stir until smooth.

Sift the flour and add in small portions to know when there is enough flour. In the end you get a soft and pliable bun that does not stick to your hands.

Cover it with film and put it in the refrigerator for half an hour.

Place the minced meat in another bowl. Add chopped herbs and spices to it. Then finely chop the onion and add it to the filling. Stir and pour in milk. It can be replaced with cream or sour cream at your discretion. So, the filling turns out juicy and very tasty.

Divide the dough into two equal parts. Cover the baking sheet with parchment. Roll out the first layer with a rolling pin and place it on a baking sheet. Spread the filling, leaving space around the edges. We lift them up. Roll out the second layer, close the filling and seal the edges. Wrap them in a nice spiral.

Grease the entire pie with sour cream and make several punctures with a fork. Sprinkle with sesame seeds and bake in the oven for forty-five minutes at 180 C.

If the pie is browning too much, cover it with foil or reduce the temperature to 160-170 C.

Remove from the oven, transfer to a board and cover with a towel for ten minutes to soften the dough a little. But it will still be tasty and crispy.

Salt, pepper and cool. Then we pass it through the meat grinder again.

Cut the peeled potatoes into very thin slices.

Finely chop the onion, prepare chopped greens.

Peel the carrots and grate them finely.

Boil water, add a little salt and dip the potatoes in it for about three minutes. Then dry it with paper towels.

Fry the onion until golden brown. Then add carrots to it and simmer everything together for a couple more minutes.

Mix one part of the roast with minced meat, the other with potatoes. Sprinkle both pieces with herbs.

Pour kefir into a large bowl, add baking soda, mix and leave for ten minutes. Then add the remaining ingredients and bring the dough until smooth. We get thick sour cream.

Heat the baking dish slightly and grease with oil. Sprinkle the bottom with a little flour. Pour out one third of the dough and level it out. Lay out the fried potato mugs, leaving half. Pour in a little more dough and add the minced meat and frying. Fill with the rest of the dough and distribute the potato mugs on top.
